Little Italy

We waste a lot of food. Not just our family, but people in general. The compost was taking care of some of it, but I'm pretty sure it's just a frozen block of compost in the frozen tundra outside... so we have no place for kitchen scraps.

I had a TON of basil left over from my second Ratatouille adventure. In an effort not to let it go to waste, I decided to make some pesto out of it and throw it on a Boboli with tomato and mozzarella. I bought all the fixins (except, of course, basil which we already had) and prepared for my first adventure in pesto making!

Hold it right there Barefoot Contessa... Murphy's law is coming to get you. The sole reason I am making this pizza, left over basil, has gone bad... cool. 

SO I improvised with some cilantro and spinach leaves- I must say, it was pretty darn tasty. Dad even came back for seconds! 

I made this.

It's a Boboli premade crust!
